Stephen committed to play football beginning for the 2016 CFBHC season for The United States Air Force Academy. He played JUCO football at Casper College in Casper, Wyoming. He started every game after transferring to Air Force. He was named to the 2nd team All-MWC in 2016 and the 1st team All-MWC in 2017.

Mitchell-Morrison was not invited to the combine. Mitchell-Morrison was drafted in the fourth round, with the 103rd overall pick, by the New York Giants in the 2018 NFLHC Draft.
New York Giants
Mitchell-Morrison started as a rookie alongside fellow rookie Will Hall. After struggling to make a large impact, he was benched for rookie Hunter Lawrence in 2019. However, before the 2020 season Mitchell-Morrison regained his starting role with the team.
